How to make Red Beans and Rice in Korea

Can you believe that with the popularity of Popeye’s Fried Chicken in Korea, they don’t serve red beans and rice at the restaurants? Obviously, this is a perfect side dish for fried chicken.

INGREDIENTS
2 Onions, diced
4 cloves Garlic, minced
1 Green Pepper, diced
1 Carrot, diced
1 can Red Kidney Beans, drained
1/2 cup Chicken Stock
Salt and Pepper
Optional Seasonings (Celery Salt, Thyme, Old Bay, Bay Leaf)
Sliced Sausage or Ham
Rice, cooked

1. Sweat (slowly cook with little sizzle) the veggies and garlic in olive oil until translucent.
2. Add the chicken stock, beans, seasonings, and meat and turn up the heat until it boils.
3. Reduce the heat to simmer.
4. Mash the beans while stirring them in the pot.
5. When the mixture looks nice and thick, take it off the heat.
6. Put the rice in a bowl and top it with the red bean mixture.

    Beautiful. And some nice photography – those colors are rich. Yellow pickled radish…I need to find that.

    I see what you’re saying inasofar as skipping the vinegar in the rice when there’s a pickled component.

    Beautiful photos of my favorite snack! Put a bowl of fresh sticky rice and some kimchee next to it and you have a fantastic meal! Wish I could pick one of those up and eat it. Off to the grocery for me. Gotta make some now that I have looked at yours! Made me hungry!

    hi! how long can kimbap keep? for example, if i make a lot of kimbap on monday and i cannot finish them, i keep them in the frdige.     hi, i was just wondering if you knew how to make the kim bob (sp) which is shaped like a square . do u make it the same way but wrap it differently? heh i had it a while ago and maybe you can help me lol. my e mail is [email protected]

    I’m pretty sure any funky shapes were done in a mold. We actually have some molds in the house to make little rice treats shaped like stars and such. I also have a little triangle kimbap kit.

    So I guess you just need to find a narrow quadratical container (a butter dish?), put the seaweed in, and throw in a layer of rice and ingredients. Top with a layer of rice and cover with the seaweed that is hanging over the edges. Get something to compress it all down, and I think you got it.
