The Unspoken Rule of Korean Fried Chicken Joints

There’s a rule I’ve come to trust at Korean fried chicken joints: the worse the cabbage slaw, the better the chicken.

Two-Two Chicken in Myeongdong put that theory to the test. The slaw arrived looking like someone dumped cabbage, mayo, and ketchup into a bowl and stirred twice. No finesse, no balance, just a pink mess sitting next to the good stuff.

And that’s the tell. A place that hasn’t bothered perfecting its slaw is a place that’s put all its effort somewhere else. The chicken here backed that up completely, deep golden, shatteringly crisp on the outside, still juicy underneath. The fries next to it were just as sharp, seasoned well, fried hot, gone fast.

A couple of cold beers rounded it out. Nothing fancy needed there either.

Next time a fried chicken joint hands you a sad, lazy slaw, don’t write the place off. Order the chicken first and find out.
