There’s this trend of putting mozzarella cheese on Korean food. And in some cases it works. This row of gobchang (intestine) joints in Hongdae are doing this as a gimmick, but the cheese makes sense. The gobchang itself is done stir-fried style with a little heat. You can choose regular, many cheese, or many many cheese. The fat in the cheese counters the spice in the sauce. For the really brave, they serve spicy boneless chicken feet (dalkbal). Even though they’re painful, I kept eating one more.
